Soft eggnog cookies

Cuddle up this holiday season with a glass of milk and these yummy eggnog cookies. The recipe makes roughly 2 dozen cookies, depending on your size preference.

Cookie Ingredients
2 ¼ cups flour
2 tbsp. baking powder
½ tsp. salt
½ tsp. nutmeg
½ tsp. cinnamon
¾ cup unsalted butter, room temp
½ cup sugar
½ cup brown sugar
2 egg yolks
1 tsp. vanilla
½ tsp. rum extract
½ cup eggnog

Frosting Ingredients
½ cup butter, room temp
4 tbsp. eggnog
½ tsp. rum extract
3 cups powdered sugar

Instructions
Preheat oven to 350º. In a bowl, combine all dry ingredients except the sugars. In a mixer, cream together the sugars and butter. Add in the eggs and the rest of the wet ingredients. Scrape down the sides and beat until well combined. Slowly add in the dry mixture, making sure not to over-mix. Add spoonfuls of the dough onto a baking sheet lined with parchment, leaving space between. Bake for 10-12 minutes. While baking, prepare your frosting: In a clean mixer bowl, whip the butter until fluffy. Add in the rest of the ingredients and beat until well combined. Frost the cookies once they have cooled and enjoy!
