Here is a quick recipe for Soba noodles with pesto and vegetables. The vegetables come directly from a farmer's market. The pesto can be either home-made or store-bought.
Ingredients (for one portion)
1 cup cooked Soba noodles
1 teaspoon olive oil
1 garlic clove, sliced
1-2 zucchini, sliced on diagonal
2-3 small yellow or red tomatoes, cut into bite-size pieces
1-2 tablespoons pesto
1 tablespoon Parmesan cheese

Directions
1. Heat oil in a pan. Add garlic and cook for 1-2 minutes.
2. Add zucchini slices and cook for about 5 minutes until tender.
3. Add tomatoes and season with salt and pepper.
4. Combine hot cooked pasta with pesto, add vegetables.
5. Serve noodles with pesto and vegetables in a bowl topped with Parmesan cheese.
