Karen Anderson at Tucker's Restaurant in Southwick, MA created this sublime cocktail that has a slightly sweet caramel accent. It is not a girly drink but rather a true cocktail in the vein of vintage libations like the perfect martini or gimlet.
The only way to get a true Karentini is by going to Tucker's. Karen may even be there to make it for you. Maple distilled vodka from Vermont, a house made ginger syrup consisting of fresh ginger and agave nectar give it its signature style.
This recipe will do to make a Karentini at home. It is portioned per cocktail.
- 3 oz. Vermont Gold Vodka
- 1 oz. Agave Necter Syrup, local honey or a ginger syrup
Combine in a shaker with chopped ice. Shake vigorously and strain into a chilled martini glass. (Karen suggests chilling the glasses in your freezer at home).
Serve with a squeeze of fresh lemon.
If you are fortunate enough to get to Tucker's for the real thing try it with the Scallops Wrapped in Bacon or a Mixed Greens salad with crumbled blue cheese, walnuts and port wine vinaigrette. It is also well paired with the Grilled Chicken Sandwich with honey mustard and the Chilean Sea Bass with parsnip butter.
