Skinny Chicken Parmesan
1/4 c parmesan cheese, grated
2 TBSP dried Italian seasoned breadcrumbs
1/4 tsp. paprika
1 tsp. dried parsley
1 tsp. garlic powder
1/4 tsp. fresh ground pepper
4 boneless skinless chicken breasts (about 1 pound)
Preheat oven to 400 degrees Fahrenheit. In a Ziploc plastic bag, combine the cheese, bread crumbs and all seasonings; shake well. Transfer the mixture to plate and dip each chicken breast into the mixture, turning to make sure all sides are coated. Arrange on a non-stick baking sheet. Bake until the chicken is cooked through, to 165 degrees Fahrenheit, approximately 20-25 minutes.
