To go low carb, replace corn and black beans with cooked ground beef and chorizo. Other delicious options are as simple as substituting sharp cheddar cheese for Pepper Jack cheese. Or substitute your favorite fresh salsa for the picante sauce. If you like it spicy, add a half teaspoon of ground cayenne pepper or ground chilpolte pepper.

Skillet Tex Mex Corn and Bean Salsa
Serves 8-10
1 tablespoon olive oil
1 cup red onion, chopped
3 cloves garlic, minced
1 -15 ounce can black beans, rinsed and drained
1/2 cup fresh corn kernels
3/4 cup chopped tomatoes
1/2 cup mild picante sauce
1 teaspoon ground cumin
1 teaspoon chili powder
1 cup Pepper Jack cheese, shredded
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice
Sauté onions and garlic in oil for 4 minutes. Add beans, corn, tomato, picante sauce, cumin, and chili powder into pan and cook 5 minutes or until thickened. Remove from heat, mix in cheese, cilantro and lime juice; stir until cheese is melted. Serve with tortilla chips, over salad greens, in quesadillas, or as a side for tacos, fajitas or burritos.
