Just in time for your Memorial Day brunching! This past weekend I had a deliciously different peach bellini, and one which is perfect for summer weather ahead. Start with your favorite fruit, or in this case peaches, and buy them frozen or throw them in a freezer (chopped into smaller pieces). Using a blender or smoothie maker, blend together the frozen fruit with a little of your favorite fruit juice, and maybe even a splash of grenadine. Spoon the sorbet-like mixture into a glass, and top with your favorite prosecco.

This is the perfect, easy, and delicious summer cocktail for brunch, or anytime. Cheers!
