Simple Summer Striped Bass Recipes

In the summer striped bass school deep in our Carolina lakes and can be caught by vertical jigging. Summer striped bass are a great fresh fish treat and fit into any number of terrific recipes. Here are some of my faves for them:

Honey Fried Striped Bass

1 lb striped bass fillets
2 tablespoons honey
4 tablespoons butter
1 lemon
½ cup cornmeal
¼ cup flour
½ teaspoon salt
½ teaspoon pepper
1 egg
1/3 cup milk

Mix cornmeal, flour, salt and pepper in bowl. Mix egg and milk in separate bowl. Rub striped bass with lemon and dredge in cornmeal mixture. Dip striped bass in milk mixture and then back into cornmeal mixture. Heat butter to almost smoking in frying pan. Put striped bass in pan and cook until golden brown on both sides. Put honey on top of striped bass then lower heat, cover, and cook for a few minutes. Serves 4.

Jeffrey's Striped Bass for Daughters

6 striped bass fillets
1 cup flour
1 cup cornmeal
dash each black pepper, Cayenne pepper, garlic powder, and salt
milk
olive oil
Heat olive oil in skillet on medium heat. Combine flour, cornmeal, and spices in a shallow dish and mix. Dip fillets in milk and then dredge through flour mixture coating fish thoroughly and evenly. Fry fillets in hot olive oil for 4 minutes, turn and fry 3 minutes or until fish is done.

Drain on paper towels and serve with cream soda and Organic Macaroni & Cheese. Serves 3.

Breakfast Striped Bass

1 striped bass fillet
1 Vidalia onion, sliced
orange juice
2 oranges
1 lemon

Marinate the fillet in orange juice for six hours. Discard the orange juice marinate.
Place aluminum foil inside a baking pan. Put the striped bass fillet in the middle. Pour new orange juice until it covers the fish half way. Cover the top of the fillet with sliced Vidalia onions and sliced orange and lemon. Cover the orange slices with sliced lemon. Seal the aluminum foil to retain the juices while baking. Bake at 400 degrees until fish flakes easily.

When done, remove the cooked orange slices and lemon slices. Before serving, squeeze fresh orange juice over the fillet. Serve with the onion slices on top and garnish with orange slices. Serves 1.

Creamy Striped Bass

2 lb striped bass fillets
2 tablespoons butter
1 cup sour cream
1/3 cup grated Parmesan cheese
1 cup onions, sliced
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon oregano
1/4 cup olive oil

Arrange fillets in a buttered baking dish. Combine sour cream, grated cheese, lemon juice and spread over fish. Top with onion slices. Bake into a 350°F degree oven for 15 minutes or until fish is tender. Serves 4-5.
