Salad and sweet potatoes make a lovely spring meal
Dinner doesn't always have to be a complicated affair. And with spring in the air -- and in the garden -- it's easier than ever to pull together a quick, nutritious, tasty, and satisfying meal.
Even if some of your ingredients come from the grocery instead of straight from the ground, you can add a sustainable twist to just about anything you might serve your family or guests.
On my table last night:
- Salad with fresh-picked spinach, bean sprouts, and tomatoes from my Boston Organics Dogma Box
- Baked sweet potato, also from my Dogma Box, with Cabot cheddar cheese
- Apple cider from a local orchard
- Brownies from a box mix, made with eggs from a local farmer
