Simple pear and goat cheese pancetta crisp recipe

Simple can be wonderful. This time of year, many people would rather be squeezing in one last bike ride in the crisp, sun-lit fall air before winter’s gloom descends than hovering over the stove. It’s understandable. In this spirit, if family is dropping by, try this simple and delicious appetizer recipe, provided by a friend of mine from Maine. The make everyone get out and enjoy those last sunny days before Old Man Winter storms in on us.

Star’s pear and goat cheese pancetta crisp recipe
• 16 thin slices pancetta
• 16 teaspoons soft, fresh goat cheese (from 5-ounce log)
• 2 very ripe small pears, halved, cored, cut into 1/4-inch-thick slices
• Thyme leaves to taste
• Fresh black pepper

Season pancetta with some fresh cracked pepper. Sprinkle with thyme. Then bake the pancetta on a baking sheet in a hot oven at 450 degrees for just a few minutes until golden and crisp!
Then top each slice with a teaspoon of the goat cheese and a thin slice of pear. Garnish with a pinch more of the thyme. Share with your fall visitors.
