If breakfast is the most important meal of the day, eating the same cereal every single morning is a recipe for mediocrity at best. Every now and again it's good to mix up your morning routine and give your palate a much-needed flavor boost in those early a.m. hours. Though it may seem like a hassle to spend a few extra minutes throwing together your morning meal instead of pressing that Snooze button a second (or fifth) time, a tasty, filling breakfast needn't be stressful. If you put a couple of eggs on the stove to boil when you first wake up, they'll be ready by the time you are. Though hard-boiled eggs aren't all that exciting on their own, when combined with butter, bacon, and a whole lot of flavor, you've got yourself a delicious, protein-packed scramble worthy of jump-starting your day.
Ingredients for 1 serving:
2 hard-boiled eggs
2-3 slices turkey bacon
1 tbsp olive oil
1/2 tbsp butter
1/2 large tomato
2 slices of bread, lightly toasted
1. Heat olive oil in a frying pan.
2. Slice turkey bacon into bite-size pieces; add to pan.
3. Meanwhile, mash eggs and butter together with a fork in a small bowl.
4. Add salt and peppers to taste, mix thoroughly.
5. Dice tomato, add to bowl and mix.
6. Add bacon and serve.
Get creative! You can make a large batch of hard-boiled eggs on a Sunday and substitute different mix-ins throughout the week. Try making the scramble into a breakfast burrito one day, or enjoy it on top of a salad with some balsamic vinegar for lunch.
