Sea trout are among our most delicious fish from the ocean. Speckled trout are a southern species ranging from Virginia to Texas, while weakfish (or gray trout) are a more northern species that ranges down from Maine through the Carolinas.
Stocks of both sea trout are down in many areas, so if you catch them make sure you obey local limits when keeping sea trout. Gray trout have firm white and gray meat while speckled trout have even firmer white meat that is a little less “fishy” tasting than weakfish.

Tastiest Baked Sea Trout
1 ½ lbs sea trout (weakfish or speckled trout) fillets
1 onion, diced
1 green pepper, diced
1 cup fresh mushrooms, diced
1 tablespoon Old Bay seafood seasoning
1 tablespoon Kikkoman soy sauce
1 tablespoon lemon juice
Shredded cheddar cheese
Olive oil
Put a tablespoon of olive oil in a stove top skillet and sauté onions for 4 minutes on med high heat. Add peppers and sauté 2 minutes then remove from heat.
Preheat oven to 375 degrees. Grease a large baking dish with olive oil. Add sea trout fillet. Season sea trout with seafood seasoning, lemon juice, and soy sauce. Place mushrooms over sea trout. Pour onions and green pepper over everything and place in oven. Cook 22 minutes. Stir if necessary and add cheddar cheese (however much you want) over top. Return to oven and cook 5 minutes.
Serve with wild rice and garlic bread. Serves 5.
Baked Lemon Sea Trout
1 lb sea trout fillets
3 tablespoons applesauce
¼ cup fresh lemon juice
1 egg, beaten
1 tablespoon vegetable oil
1 cup fine dry bread crumbs
salt and pepper
olive oil
Mix applesauce, lemon juice, egg and vegetable oil in a bowl. Marinade sea trout in mixture in the refrigerator for one hour. Take sea trout fillets out, sprinkle with salt and pepper, and dip in bread crumbs. Place in a baking dish greased with olive oil and bake at 400 for 18-20 minutes or until sea trout is done. Serves 4.
Easy Sea Trout Chowder
1 lb sea trout (speckled trout is best) fillets, cut into 1 inch pieces
4 slices bacon
1 lb chopped tomatoes
1 lb potatoes, cooked and diced
1 small onion, chopped
½ teaspoon thyme
½ teaspoon pepper
1 tablespoon lemon juice
1/3 cup tomato juice
dash salt
Fry bacon until crisp. Remove from pan and set aside. In bacon grease cook onion until translucent. Add remaining ingredients. Cover and simmer 10 minutes, keep on medium heat and stir frequently. Add crumbled bacon and serve. Serves 4.
