With the long, cold Atlanta winter this year, springtime still seems far away.  Keep away the winter chill by including this hearty simmered cabbage with apples recipe in tonight's dinner.  Serve it over short- or medium-grain brown rice, which takes the same amount of time to cook so it's a great accompaniment.  If you're a little sensitive to vinegar, you can substitute half of the recommended amount with water (or apple juice, if you're in an experimental mood).


Ingredients


  • 1 large onion, chopped

  • 1/2 head of green cabbage, roughly chopped

  • 1 lb of granny smith apples, chopped

  • 1 tbsp canola oil

  • 2 tbsp whole-grain mustard

  • 3/4 cup brown rice or apple cider vinegar

  • 1/4 tsp salt


Directions


Heat oil in a large pan and add onions, sauteing until transparent. Add the mustard and coat onions evenly, then add the apples and cabbage and saute for 1-2 minutes. Add the vinegar and salt and turn heat to low. Simmer for 60 minutes.


Makes about 5 2-cup servings.
