This chocolate frosting comes from “The Silver Palate Cookbook" by Julee Rosso and Sheila Lukins. ISBN: 0894802046. It is paired with decadent chocolate cake, but would be wonderful just about any cake.
2 Tbsp. sweet butter
3/4 cup semisweet chocolate chips
6 Tbsp. heavy cream
1 ¼ cups confectioner’s sugar
1 tsp. vanilla extract
Place the butter, chocolate chips, heavy cream, confectioner’s sugar and vanilla extract in a heavy saucepan. Over low heat, whisk until the chocolate is melted and smooth.
Cool slightly and check for consistency. Add more sugar if it is too thin.
Frost the cooled cake with the warm frosting and serve.
