Silver Oak Cellars Cabernet Sauvignon is regularly rated as one of the top most requested wines in American restaurants and the Napa Valley Cab is the king of the Silver Oak wines. The new 2008 Napa Valley Cab released this month continues this great tradition. It is a blend of 83% Cabernet Sauvignon, 7% Malbec 7% Cabernet Franc and 3% Petit Verdot.
For the friends at Silver Oak, this vintage has a particular importance. This is the first vintage produced by the new winery that replaced the one that was burned in February 2006. The new winery was designed specifically suited to produce the Napa Valley Cabernet Sauvignon. Many technological advancements were incorporated to allow for flexibility to allow changes in the future, making it a world class facility.
This vintage of their famous Napa Valley Cabernet Sauvignon is complex and truly shows why Napa Valley is famous for Cabs. It has a deep garnet color and a complex nose of black cherry, boysenberry, cassis, licorice, coffee and spice. On the palate you are immediately exposed to the same dark fruit and spice with a velvety quality in the mouth. It is suggested that this wine be decanted or allowed to air for an hour prior to drinking to mellow out the tannic grip and show off the soft texture. The finish is long with a silkiness quality. This wine is ready to drink now and for the next 15-18 years.
Daniel Baron, Director of Winemaking at Silver Oak, states, “This is a complex and layered expression of California Cabernet.”
The grapes for this wine were selected from various special vineyards in Napa and aged for 24 months in 100% American oak barrels and then another 20 months in the bottle to harmonize its components and meet the standards Cab lovers have come to expect from Silver Oak.
