Using a copper pot still with a copper side column, Troy Roberts of Drum Circle Distilling produces his light, clear Siesta Key white rum using two different strains of yeast for an optimal aroma and flavor blend.
Much of the rum is filtered with activated carbon made from coconut husks, just enough to smooth the spirit without taking out essential flavors. The rum forms medium thin legs in a tasting glass which start to run quickly, then seem to remain almost indefinitely.
The resulting light bodied rum opens with a delicate floral nose suggesting sweet vanilla and butterscotch above a hint of grassy cane. The taste is surprisingly light and slightly sweet caramel with a touch a anise, warm baked shortbread cookie, a hint of pepper and spice. The finish is warm with lingering pepper, quite smooth with just a touch of sweetness.
Sietsa Key white rum is available widely on Florida's Southwest coast and through ABC liquors online site.
