Try this simple but delicious shrimp stew. Traditionally, rice is used but in this version you can use your favorite pasta.. bow tie, spaghetti, fettucini, angel hair, or elbow - any pasta will do.

SHRIMP over PASTA (or rice)

2 T butter spread
2 T olive oil- or more of the above
4 garlic cloves, minced, divided
1 lb cleaned, deveined shrimp
1/2 tsp each of the your fave seasonings or: Morton's Nature, Tony's Cajun, Italian herb
1 tsp Thai basil, divided
1/4 c minced parsley, divided,
approx. 1 c chicken broth
1 -1 1/2 c shredded Pepper Jack cheese (or Monterey Jack or other)
2-3 T shredded Parmesan
3 oz cream cheese or Riccota cheese

Hot cooked pasta (your favorite) or rice.

In a heavy skillet or saucepot, saute about half of the garlic in oil and butter for about 1 minute. Add shrimp and stir about 2 minute over med-high heat or until shrimp are pink. Sprinkle in seasonings, add broth, bring to a boil, lower the heat and stir in shredded cheese. After cheese melts, sprinkle with the remaining basil and/or parsley.
Serve over cooked pasta or rice. Serves 4-5.
