Guests were greeted with nautical inspired cocktails on the upper deck of the museum which offered unobstructed views of the beautiful San Francisco Bay and the nail biting first race of the 34th America's Cup.
Shellback Rum, a newbie to the rum industry, although owned by E.J. Gallo, a Modesto based company, (widely known for wine) produces their rum in Barbados at the West Indies Rum Distillery.
The name 'Shellback' refers to those sailors who bravely ventured the open seas crossing the equator in search of new discoveries. In the same fashion, Shellback Rum searched the Caribbean for the finest sugar cane, as well as sourcing the most exotic spices from all over the world. A medium bodied rum, that although easy to drink and smooth on the palate has nice spice undertones. You can taste the cinnamon, cassia and clove and a nice caramelized honey with a touch of vanilla. Refreshing at first sip with a hint of exotic spices, not too sweet and then a slow burn like popping a handful of 'Red Hot' candies in your mouth. Different and delicious.
Fast 40 Knots
1oz Shellback Spiced Rum
1oz Fresh Lemon Juice
1oz Fast 40 Knots Syrup *see recipe below
Small Red Chili's or a pinch of chopped red chili's
In a tall glass filled with ice add all ingredients, give a stir and enjoy.
The Fast 40 Knots syrup was hush hush, so here is a simple syrup recipe that will achieve the same results.
In a saucepan add 2 cups water and 2 cups granulated sugar and 3 halved small spicy red chili's. Simmer for 10 minutes, remove from heat, add cinnamon (too your desired taste) put in a container to cool and let infuse for 1-2 weeks. Store in the refrigerator for future uses.
1 1/2oz Shellback Spiced Rum
1/4oz Coffee Liqueur
1oz Ruby Red Grapefruit Juice
3oz Ginger Beer
Lime Wedge Squeezed
In a tall glass filled with ice add all ingredients, give a stir and enjoy!
Blood Orange and Basil Mojito
1 1/2oz Shellback Silver Rum
15 Mint Leaves
4 Basil Leaves
1oz Lime Juice
1/2oz Simple Syrup
2oz Blood Orange Soda
Muddle mint, basil and lime in the bottom of a tall glass. Add rum, simple syrup and ice. Shake to blend. Top with blood orange soda. Remember: Simple syrup is equal parts sugar and water heated in a saucepan until sugar dissolves. Let cool completely before use. Do not shake cocktail with the soda or it will explode.

Caribbean Rum Balls with Cocoa Nibs and Coconut
(by far the most amazing balls of rum and chocolate on earth!)
2 Cups 72% Dark Chocolate
1 Cup Heavy Cream
1/2 Cup Shellback Silver Rum
1 Cup Toasted Sweet Coconut
1/2 Cocoa Nibs
1/2 Cup Rice Crispies
1/2 Cup Corn Flakes
1 Pinch Salt
Heat chocolate and cream in a double boiler until melted. Whisk in Shellback Rum. Fold in all other ingredients until smooth. Pour into shallow pan and let cool until solid. Scoop and roll into balls, Cover with powdered sugar or cocoa powder. Makes 1-2 dozen depending on size of balls.
