You don’t have to be a bear to love honey. I was raised on it, my mom being a health nut way back before there were health nuts. She didn’t allow me to have sugar. Actually, honey isn’t all that much better for you than sugar. It has more minerals than sugar and of course it not refined, but, it is a sugar and we all need to watch the amount of sugar we eat. But good for you or not, it sure is great tasting.
We all know of course that honey is great for baking but it can be utilized in traditionally savory dishes as well. One of the things it adapts well to is chicken. Hey! What a great idea, honey glazed chicken, particularly since it’s also National Chicken Month.
Honey Ginger Glazed Chicken
1 whole chicken, cut into serving pieces
1 cup honey
¼ cup olive oil
¼ cup dark soy sauce
1 teaspoon finely grated fresh ginger root – or to taste
3 or 4 very finely minced cloves of fresh garlic
About half a teaspoon dry dill weed
About a teaspoon mixed dry herbs, (Italian seasoning)
Salt and fresh ground black pepper to taste
Some fresh cilantro, chopped
Cut the chicken into serving pieces, if it hasn’t all ready been done, rinse under cold running water and pat dry. Set aside.
Combine the remaining ingredients, except salt, pepper and cilantro and put into a small sauce pan and bring to a simmer over a medium heat. Reduce the heat to low and continue to simmer for two or three more minutes. Remove from the heat.
Place the chicken under the broiler and cook turning once until it is about half way to the degree of doneness you desire. Paint with the honey glaze and continue broiling for a few minutes, then turn over with tongues and paint the other side with the glaze. Continue doing this every few minutes until the until the chicken has reached the degree of doneness you desire and it has a beautiful golden brown and glossy glaze. You may wish to remove the breasts a bit before the rest, as they tend to cook fastest.
