Savory Cheddar Cheese Biscuits (adapted from King Arthur Flour):
· 2 cups unbleached self-rising flour or all-purpose baking mix (like Bisquick)
· 4 ounces (1 cup) shredded cheddar cheese (preferably sharp)
· 1 cup heavy cream
Pre-heat the oven to 425-degrees F, with a rack in the upper third. Combine shredded cheese with the flour, then add the cream; the combined result should be a firm dough. Transfer the dough to a lightly floured work surface.
Pat the dough into a disc 3/4" to 1" thick (the thicker the disc, the taller the biscuits will be). Use a 2" cutter (or the size of your choice, or a drinking glass) to cut rounds. Place the cut biscuits on an ungreased or parchment-lined baking sheet. Brush the tops of the biscuits with cream or milk, if desired, to help brown the crust. (*author’s note: I added more cheese to the top of the biscuits before baking.)
Bake the biscuits for 15 to 18 minutes, until they're golden brown. Remove them from the oven, and serve immediately.
