Back to school signals the return of high calorie and high fat foods for lunch. With a little prep time, you can create delicious lunches (that are secretly good for them). The Perfect Sandwich:
Sandwiches don’t need to be boring. Try granary bread, pita pockets, bagels or wraps. To prevent sandwiches getting squashed, store them in a small plastic container in your child’s lunchbox.
Warm the tortilla in a dry frying pan. Mix the mayonnaise with 2 to 3 drops of lemon juice and 1/2 tbsp ketchup and spread over the tortilla. The scatter lettuce over half the tortilla and layer the chicken and tomatoes on top. Add salt and pepper and roll up to eat!
1 oz cooked chicken
3 cherry tomatoes
1 tbsp mayonnaise
Tomato, Mozzarella and Pesto Wrap
Warm the tortilla in a dry frying pan. Spread over the pesto and mayonnaise mixture, then lay the mozzarella and tomato down the center of the tortilla. Season with salt and pepper and roll up to enjoy!
1 Large Tomato, skinned, seeded, and quartered
2oz sliced mozzarella
1 tbsp mayonnaise mixed with 1 tsp pesto
