Chef owner Leslie Mackie modeled Seattle’s Macrina artisan bakery on traditional bread baking with an emphasis on regional, organic and natural ingredients. The rustic breads and baked goods at Macrina use as many indigenous products as possible, organic grains and natural ingredients. Macrina the younger was a holy woman in fourth century Greece who established a monastery and nunnery where she lived a simple lifestyle based on austerity, community and prayer. This philosophy of bread and community is behind the breads, cakes and pastries at Macrina. However, there is nothing austere about the cakes and pastries at Macrina and the wholesome and delicious specialty breads are reason enough to meditate.
