Fuji Bakery creates magic with some of the finest pastries, breads and cakes found in any shop, anywhere. Thankfully, the Japanese artisans Taka Hirai and Yushi Osawa came to the Northwest to open Fuji Bakery stores in Seattle and Bellevue. The pastries include French brioche and croissants, sweet Japanese bean pastries and curry buns as well as delicious breads such as Italian focaccia and panettone, along with white, raisin and levain (sourdough).
In addition to the breads, Danish pastries and croissants, Fuji also offers several varieties of quiche in individual portions, European-style baguette and other specialty sandwiches along with spreads and flavored butters. Finally, Fuji features exquisitely designed cakes (currently at the Bellevue location only) that dazzle the eye as well as the palate. As in all of the pastries, breads and cakes at Fuji Bakery the attention to detail is seen in the careful selection of ingredients as well as the meticulous execution of every product they offer.
The dazzling pastries and fragrant breads are the passionate creation of the young artisan bakers who use only the best ingredients found. Fuji Bakery makes its own fresh yeast and custards from scratch, uses organic flour and dairy products and sources products specifically for their quality (such as the organic red bean paste).
Feel free to engage the congenial staff for help in making a selection from all of the breads and pastries. For the first-timer, try an assortment of pastries that samples the variety offered at Fuji Bakery, such as a soft and sweet Brioche Sel, any croissant, a Green Tea or Pear Danish, a cube-shaped Brioche Japon with red bean paste and raspberry, a Spicy Curry Beef bun and the Focaccia Legume.

While individual desserts are sold in-store on a first-come, first-serve basis, full cakes are made only by pre-order.
