Seasons 52 is continuing its streak of creating flavorful mini desserts that are seasonally inspired and low in calories. Available exclusively at the Coral Gables location of Seasons 52 is the Tres Leches Mini Indulgence. Lead by Culinary Director, Cliff Pleau, Seasons 52 takes the Miami staple and creates a dessert that is truly their own.
The dessert is prepared by creating a simple sponge cake and then adding the "three milks" of heavy cream, evaporated milk, and condensed milk. To give the dessert a Seasons 52 signature flavoring, rum is added to the milks and the dessert is topped with white cake frosting. What you get is a dessert that is very much a representation of typical Miami desserts while also being a dessert that is a representation of the unique dining experience inherent in Seasons 52's approach to food.
Tres Leches

Makes 2 cakes, Serves 10-12
Ingredients
- 2½ cups flour
- 1 teaspoon baking powder
- 8 eggs, white and yolks separated
- 1 cup sugar
- 2 teaspoons vanilla extract (essence)
- ¾ cup milk (6 oz)
- 1 can evaporated milk (12 oz)
- 1 can sweetened condensed milk (14 oz)
- 1 cup heavy cream (8 oz)
- ¼ cup rum (optional)
- 1 cup white cake frosting
Procedure:
- Preheat oven to 350 degrees F. Prepare two 8-inch cake pans by coating them with cooking spray.
- In a large bowl, beat the egg whites with an electric mixer until frothy.
- Add the sugar and beat to form stiff peaks.
- Turn mixer to a slower speed and add yolks one at a time. Add vanilla extract, one-third
- of the flour and one-third of the milk. Repeat three times until all the flour and milk are incorporated.
- Pour the mix into the cake pans and bake for 30-40 minutes. Test with toothpick inserted into the center; it should come out clean. Let cakes cool for a few minutes and using a toothpick, poke several holes in the cakes.
- Meanwhile, combine the evaporated milk, condensed milk and cream in a bowl. Add rum (optional). Pour half of the milk mixture over one of the cakes and the other half over the other cake. Let the cakes sit for 10-15 minutes, or until all the liquid has been absorbed.
- Frost each cake with the frosting.
