Seasoning vegetables for grilling

Everybody knows this is Cleveland's premier grilling season. And while we usually grill steaks, chicken and chops - here is a grilling recipe for vegetables. Veggies are even better when basted with a flavored olive oil right before grilling. Here is an easy recipe to use as a guide.

1 cup of olive oil

2 1/2 teaspoons of minced fresh rosemary leaves

2 tablespoons of lemon juice

2 teaspoons of grated lemon zest

Mix together all ingredients and allow mixture to stand for 30 minutes. Brush basting liquid on vegetables immediately before grilling. Season with kosher salt and fresh ground pepper.

Grill until tender over indirect heat.

Discard any unused oil.

What makes this a great recipe is the lemon juice and zest can be switched out for orange juice and zest. Or any other cirtus.

Try changing the minced rosemary to chopped thyme, or oregano. With this recipe, let your imagination soar.
