Everyone is gearing up for the Superbowl this Sunday. People are thinking food and drink. It's time to find favorites to not only impress your guests but make the party memorable, seasonal, and healthy. Some would say seasonal produce is typically healthy and those someones would be right.
Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit. Source.
A very healthy option and one to be added to your party food recipes is the California Avocado. As confirmed by Food Manufacturing:
So why the avocado and why the Super Bowl? It helped that the avocado season happens to hit its prime right around kickoff. Source.
Where can you get this enticing, ovalesque, tantilizing piece of goodness? Your local store such as Hannafords. Where ever you chose to purchase the freshest, ripest, in season avocados, make sure to make use of them in the following recipe for one of the best party pizzas featured at your Superbowl party this Sunday.
■12 oz pizza dough
■3/4 cup chopped garlic
■1 TBS chopped parsley
■1 oz olive oil
■4 oz shredded mozzarella cheese, divided
■5 oz cooked chicken breast, diced *If you don’t eat chicken, use a vegetarian substitute. I made half of the pizza for Ted and used cooked chicken bought from Hannafords Market and the other half I added a vegetarian “chicken strips” substitute.
■1 oz sliced red onion
■1 oz chopped pepperoncini
■1/2 fresh California avocado cut into 8 slices
■1 1/2 oz feta cheese, crumbles
■1 oz sliced Kalamata olives
Preheat oven to 475 F. Shape pizza into a 12” round pie.
Combine garlic, parsley and oil to form a paste. Brush the paste on the formed dough.
Sprinkle 3/4 cup mozzarella cheese on top. Add the chicken or substitute, red onion, pepperoncini, avocado, feta cheese and olives.
Spread remaining mozzarella cheese on top.
Bake for 12 minutes or until cheese is melted and crust is brown.
