The State Fair is coming in October to Raleigh and it reminds me of "fair food". Fair food usually consists of deep fried concoctions, turkey legs, and Polish sausage sandwiches. This is my recipe for a very easy sausage sandwich. You could also pour this mixture over pasta which would make a quick weeknight dinner as well.
Easy Polish Sausage Sandwich or Pasta
- 4-6 hoagie rolls or 16 oz. of spaghetti
- 1 pkg. Polish sausage (four to six links depending on the brand)
- 2 TBS. olive oil
- 1 small jar (14 oz.) spaghetti sauce
- 1/2 of a green bell pepper, sliced
- 1/2 of a red bell pepper, sliced
- 1 small onion, sliced
Cut sausage into bitesize chunks if serving over pasta; otherwise leave whole. Place sausage, peppers, onion, and oil in a large frying pan. Cook until browned and cooked through (about 10 minutes). Add spaghetti sauce and cook to heat. Place in hoagie buns (one sausage plus sauce, peppers, and onions) or over cooked pasta.
