First: Don't make a face until you've tried kale chips. My two teens did. After indulging me, they'll be a staple around the house from now on.
Light, crunchy, seasoned, and best of all healthy, researchers can now identify over 45 different flavonoids in kale, according to WFFoods.org, a site dedicated to world's healthiest foods. With kaempferol and quercetin heading the list, kale's flavonoids combine both antioxidant and anti-inflammatory benefits in way that gives kale a leading dietary role with respect to avoidance of chronic inflammation and oxidative stress.
