How long is an acceptable wait time for sushi or a roll at a mall food court? For one customer, it took 20 minutes for an order to come out from Sarku Japan at Westfield Mission Valley.
One late afternoon, (post lunch rush and pre-dinner rush), a customer ordered their #8 along with the Special of the Day. The #8 is a California Roll and a Shrimp Tempura Roll; the Special was Chicken and Shrimp served with vegetables and rice. As always double meat, which was requested, is an additional 99 cents.
The Special was ready within approximately three minutes. As instructed, she picked up her order in front of the cook and waited for her rolls by the register so she could eat her meal all together.

While the cashier offered to call her once it was ready, it would have been taxing to have to get up multiple times for one order because she had her 5-week old newborn child with her.
When the sushi chef finally delivered the remainder of her order across the counter, there was no remorse. Neither he nor the cashier apologized for the delay or the inconvenience.
For another customer, also on a mid weekday afternoon, and who is also mother to a newborn the story was different. At the nearby Fashion Valley mall, it took approximately five minutes for her order from the same company. She was able to eat her Special of the Day (Teriyaki Chicken with steamed rice and vegetables) happily along side her salmon roll.
Both customers agreed that the food was worth the price but do you think it was worth the wait?
