The Department of Public Health has developed a guide for restaurants to follow while moving towards sustainability, making it simpler for them to become more Earth friendly. This is great for restaurants, but City bars have somehow been left out of the guidebook and plan. Luckily, Green & Tonic has formed to ensure that sustainability is spreading to the City’s bars with so much dedication, that it’s intoxicating.

To start, Green & Tonic has already helped Elixir Saloon in taking serious steps towards sustainability. In completing their mission, Green & Tonic advises bars on several topics; from purchasing biodegradable straws and organic alcohol, to larger scale changes like buying Energy Star appliances. The group also provides bars with facts on how much money they will save by becoming more sustainable. As well, Green & Tonic is helping bars meet the mandatory deadline of October 2009 for residential and commercial building owners to recycle and compost. On September 19, Green & Tonic will host a pub-crawl through the Mission District, drinking at three of the greenest bars in the neighborhood to bring more attention to their cause and to raise money that will go towards bars making green changes.

As Green & Tonic Co-Founder/Co-President Heather Driscoll puts it, “Our vision is a city full of bars that are operating in eco-friendly fashions, carrying green brews and spirits, and each one full of customers making the conscious decision to consume sustainably.” How can you not drink to that?
