Samosas with tamarind chutney

Samosa's are fried Indian potato dumplings. These dumplings were fun and interesting to make. My 8 year old son even liked them. I didn't make these too spicy, but , I'm sure it is possible to add a little more peppers to do the trick. They are great served along side a meal as a bread or as an appetizer or snack. To heat them, place them in the oven again, the microwave may not do it justice. The recipe makes about 6-8 single servings so I suggest to double it.

Ingredients For the Dough:

3 cups of flour

1 tsp salt

1 cup of water

3-6 tbl oil, plus more for frying

Ingredients For Potato Mixture:

11/2 lb of peeled, cubed boiled potatoes

1/2 cup canned peas or frozen

1 small to medium onion minced

3 cloves of minced garlic

2 siracha peppers or 3 green chili's (chopped finely or minced)

1-2 tsp salt

1 tsp onion powder

2 tsp coriander (I omitted this)

1 tsp Paprika

1 tsp garam masala

1 tsp cumin (ground)

1 tsp turmeric

1/2 tsp cayenne

1 1/2 tsp lemon juice

1) In a bowl:

Combine flour, 3 tbl oil, salt and 1 cup cold water and form dough. Kneed dough a little. set aside.

2) In skillet:

Add boiled potatoes, peas, hot peppers, garlic,onions and seasoning. Saute until onions are soft. Remove from heat. Allow mixture to cool for handling.

3) Transfer mixture to a bowl.

Add lemon juice and mash gently, leaving a few potatoes and peas in tact.

4) Divide dough into 8 equal pieces or smaller. Fold potato mixture in each piece of dough.

Pour oil in pan. Deep fry until golden brown about 3-5 minutes turning once after about 2 1/2 minutes.

Tamarind Sauce/Chutney sauce:

1 cup of brown sugar

4 tbl of tamarind concentrate or 4 tbl lemon juice

1 tsp ground cumin

1 tsp black salt or 1 tsp sea salt

1/2 tsp garam masala

1/2 tsp hot paprika or ( 1/4 tsp cayenne plus 3/4 tsp paprika)

*Combine ingredients in a saucepan. Bring to a boil and then take off heat. Cool. Transfer to serving dish.

Tip: Use this chutney as a condiment for my spicy curry dishes ...it will definitely add a kick! (sweet and spicy) Also, you can try adding golden raisins and sliced bananas to this sauce to make it an official chutney. I did raisins and sweet potatoes. Serve this sauce warm with vanilla ice cream for a dessert. Enjoy!
