A great healthy fish to add to your diet is salmon. It's a hearty fish with a lot of flavor to offer to a dish, or delicious on its own. If you catch it on sale,it can be very affordable. Salmon can be matched with a wide variety of flavors, such as a citrus, fresh herbs, or mustard. A favorite way of mine to dress up salmon is a balsamic glaze. Super easy and flavorful.
Glaze: Serves 4
• 1 cup balsamic vinegar
• 2 Tbsp. brown sugar
• 2 cloves of garlic minced
• Salt and pepper to taste
In a small saucepan, bring the vinegar, brown sugar, and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes. And you’re done. You can double this and keep the extra in the fridge in an air tight container. It will last up to a week easily, if you can keep it around that long. ;)
For the salmon, heat a sauté pan to med-high heat; using a pan that is safe on the stove top and oven safe is great to use. Sear off the salmon till it is nice a golden brown, and has a nice crispy crust. Flip and then finish in the oven that is set to 350 degrees. The fish should flake a part.

Roasted sweet potatoes
All you have to do is peel and large dice the sweet potatoes. Then toss them in olive oil, salt, pepper, thyme (optional-I don’t use it all the time). Everything for this is spiced to your taste, so play around and see what different spices you like. Spread the potatoes out on a baking sheet and roast at 350 degrees till soft.
Shaved Brussels sprouts with pancetta (or bacon)
• 1 tbsp. Pure Olive Oil
• 5oz Italian Diced Pancetta or bacon
• 1/4 cup onions
• 2 cloves garlic, minced
• 1lbs Shaved Brussels Sprouts
• Salt and pepper to taste
• 2 tbsp. Red wine vinegar
1. Add olive oil and pancetta to large skillet; cook on MEDIUM about 5 min, until pancetta begins to render fat but is not browned.
2. Add shallots, Brussels sprouts. Season with salt and pepper. Cook, stirring, on MEDIUM, 8-10 min, until vegetables are nearly softened but not browned. Remove from heat.
3. Add vinegar and toss
Shaving the brussels sprouts is not hard with a medallion - just watch your fingers, I made this dinner for my folks and they loved it. This dish great way to impress someone without hurting the wallet at the same time, and the best part it is healthy AND you made it!!! Enjoy!
