Salmon has always been a popular fish, whether it's canned or fresh. We've been told in recent years by health experts that salmon, as well as other cold-water fish, is plentiful in Omega-3 acids, which benefits the heart. It's a delicious way to get the healthy benefits!
There are numerous recipes around that use salmon, but I would say the most favorite way is made into patties and fried. And this is what I'm passing along the ingredients for, "Quick & Easy Salmon Patties". This recipe is exactly has the title states! I find that this is one way most people eat canned salmon, with the other alternative being in a "Salmon Loaf". These patties were something that I always liked while growing up at home and still do today. In fact, children will quite possibly like salmon prepared this way best of any other.
You'll see in the recipe that it calls for flour and baking powder. This is rather unusual, since most all recipes for salmon patties call for bread crumbs. However, when I first discovered this recipe, I decided to try it just as the recipe directed. I can assure you that it turns out great every time, in taste and in performance! The onion adds a lot of good flavor to the salmon, too.
The recipe calls for the patties to be fried. While you can do this in a regular skillet on the range top, I like to use an electric skillet because it regulates heat so well and cooks evenly. When they're done, they may be served with the traditional tartar sauce or Caesar dressing. Another way to enjoy them is to place a patty between a homemade biscuit, which is a favorite way I enjoy them.

QUICK & EASY SALMON PATTIES
- 1 can (15-16 oz.) pink salmon
- 1 egg
- 1/3 cup minced onions
- 1/2 cup all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 cups vegetable oil or vegetable shortening for frying
Drain the salmon, reserving 2 tablespoons of the liquid. In a medium bowl, mix the salmon, egg and onion well. Stir in the flour. Add the baking powder to the reserved salmon liquid and stir into the salmon mixture. Form into small patties. Heat oil or shortening in a skillet over medium heat. Fry patties in the oil until golden brown, about 5 minutes per side. Drain on paper towels and serve with tartar sauce or Caesar dressing. Yield: 4 servings.
