Bananas are among the most popular of fresh fruits. They're not only easy to eat, but are packed full of nutritional value, especially potassium. Bananas are also low in fat and are versatile in the ways to use them. Here in the southeast, a banana sandwich is a typical light lunch for many. The only real drawback to bananas is that they tend to become overripe very fast. If that happens to you, they don't necessarily have to be thrown out. They can be used in many baked goods calling for bananas, such as banana cake or bread. I'm passing along a salad that you can use bananas in and it's for a "Frozen Banana Salad".
This salad is one that can be put together in just a matter of minutes, placed in the freezer and it's ready when you are. Of course, it will need to be made ahead to make it solid enough to serve, but once it's frozen, you can serve it when you choose. This is a recipe that can make good use of the overripe bananas you may have on hand that you want to get rid of.
The recipe uses ingredients you may already have on hand, including maraschino cherries, sugar, sour cream and crushed pineapple. The cherries give this salad an attractive pastel pink color. It also contains chopped nuts for added flavor and texture. Once the mixture is made, this can be placed in individual molds and frozen, or placed in one dish, frozen and cut into squares. Here's a handy trick if you're doing the salad individually: line muffin cups with cupcake liners and pour the mixture in them. Freeze until solid. Remove the cups from the pans and place in a Ziploc bag. The bag is now frozen and whenever you need a serving of the salad, simply remove the number needed and you're set to go!

FROZEN BANANA SALAD
- 2 cups sour cream
- 1 cup crushed pineapple, not drained
- 2 large bananas, mashed
- 1/2 cup chopped nuts
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 tablespoons chopped maraschino cherries
Mix all the ingredients in the order listed. Pour into individual molds or into one 9-inch square dish. Cover and freeze until solid.
