Thanksgiving breakfast can be hectic, and usually takes a backseat to the main event of the actual dinner. Breakfast therefore needs to be simple, easy, and hopefully something that can be made ahead of time.

Rustic Pumpkin Pie Filled Muffins will fit the bill beautifully. Made with whole wheat flour, Stevia, and pureed pumpkin, these muffins are not only packed with spicy flavor and nutrition, this recipe will use up any left over pumpkin from pie making.

Make them the day before and serve on Thanksgiving morning with coffee and juice, your guests and family can help themselves while you finish in the kitchen.

Ingredients needed include:

Whole wheat flour

Unbleached all purpose flour

Baking powder

Stevia or sugar of choice

Pumpkin pie spice

Cinnamon

Cloves

Salt

Organic pumpkin puree

Light brown sugar

Apple butter

Vanilla almond milk

Virgin coconut oil
