This is my mother-in-law's rum cake recipe.. She usually makes it around the winter holidays. Whip this cake up for a rum month celebration. Adjust the alcohol amount according to your taste. A word of caution: it's not for "lightweights" or the kiddies. Adults only!
Rum Cake
- 1 yellow cake mix
- 1 small instant vanilla pudding
- 4 eggs
- 1/2 c. cold water
- 1/2 c. oil
- 1/2 c. rum
- 1/2 c. chopped pecans
Preheat oven to 350 degrees. Grease and flour a tube pan (angel food cake pan). Sprinkle nuts into the bottom of the greased pan. Mix all ingredients. Pour batter over nuts. Bake for one hour. Cool inverted on a cooling rack. Drizzle with glaze (recipe below).
Glaze:
- 1/4 lb. butter
- 1 c. sugar
- 1/4 c. water
- 1/2 c. rum
Melt butter in a medium saucepan. Stir in water and sugar. Boil 5 minutes stirring constantly. Remove from heat and stir in rum. Drizzle over cooled cake.
