Roasted Root Vegetable Chop Salad, a fresh way to celebrate the coming of spring.

 This recipe was inspired by a trip to the Enterprise Farm's Food Shed in Whately.  This salad is hearty healthy and a fantastic meal in itself or addition to a feast.  Vitamin packed root vegetables, diced and sliced are the heart of this salad. Flax Seeds, brown rice and red lentils give it substance.  Chopped kale and a Lemon Ginger Vinaigrette provide a freshness reminiscent of spring. 

Enterprise Farm was the first certified organic farm in the valley.  The bulk of their operation is involved in selling their stellar produce through wholesale channels.  Fortunately they have several options for buying directly.  Through the start of Farmer’s Market Season, the Food Shed will be open on Saturdays in Whately.  A unique aspect of this market is they have brought in fresh seasonal produce from small sustainable farms along the eastern seaboard.  As the availably of fresh produce fades nearby they head south, as the growing season comes alive they stay local.  Fresh grapefruits in January are like a burst of sunshine as are local strawberries in May.

As soon as they Farmer’s Markets open you will find them in Northampton on Saturdays and Tuesdays.  They also participate in Markets in Somerville and Brookline during the week.  If those days are not convenient for your shopping needs consider a Farm Share.  Enterprise has share plans that will keep you fed throughout the year.  Every week will be a culinary suprise, their informative website lets you know whats in season throughout the year.

Roasted Root Vegetable Chop Salad

  •  1 scarlet turnip (tradional turnip will as well), peeled and chopped in 1/2 inch chunks
  • 2 large parnips, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 1 cup chopped celerac
  • 4 cupsbrown rice, cooked
  • 1 bunch kale, chopped
  • 1 cup red lentils, cooked
  • 1 tbsp flax seeds
  • Lemon Ginger Vinaigrette

Toss all ingredients together. Allow to marinate for at least 1 hour.
