Oven Roasted Kale with Garlic and Balsamic Vinegar

This recipe was born out of a craving to munch and the need to be as health conscious as possible. The result is a "snack", a chip of sorts, that can be used as a side to a sandwich or with a meal. We ate it from a bowl, with our fingers, just like popcorn. And by the way, it's as good before it's even cooked, with all the seasonings, as it is roasted.

Oven Roasted Kale with Garlic and Balsamic Vinegar


  • 1 package pre-washed and chopped kale (produce department)
  • 1 tablespoon olive oil
  • 1 teaspoon or more balsamic vinegar
  • 1 tablespoon unsalted Mrs. Dash
  • 2 to 4 tablespoons chopped garlic
  • 1/2 to 1 teaspoon smoked paprika and/or 1/2 teaspoon cayenne pepper
  • salt and pepper, to taste


  1. Mix olive oil and vinegar with Mrs. Dash, chopped garlic, paprika, cayenne pepper, salt and pepper.
  2. Spread kale onto a sheet pan and pour oil mixture over it. Toss to mix well.
  3. Put into 400 degree oven, checking every 5 to 10 minutes, turning each time. Add more flavorings, if desired. Remove with it reaches a crispness that you like. We like it crispy like a chip, which takes 15 to 20 minutes.
  4. Sprinkle more balsamic vinegar over the top, if desired.
