So is there a difference between roasts? Since you’re cooking the meat in a crockpot so it will slow cook to a state of tenderness, you should use chuck roasts or shoulder roasts. These have more connective tissue and more fat, so you need the slow cooking to make them tender and the fat adds to the flavor. You can use any cut of meat, but why waste a more expensive cut when you don’t have to?
The gravy made from the drippings of this roast beef recipe is absolutely delicious. The flavors blend to a perfect taste. (The best gravy is made from melting 3 tablespoons of butter, whisking in 3 tablespoons of flour and cooking it for a minute while whisking, then whisking in 2+ cups of hot pan drippings until it is the thickness you desire – add a little more or less of the drippings as you’d like. Add a little salt and/or pepper to taste. This is the easy recipe for the best gravy ever!)
