Under the clear Denver skies, Chef Justin Fields of Ritz-Carlton Denver creates his culinary magic, interweaving influences from afar and mastery of technique from home. Creating a pop-up restaurant series this summer, Chef Fields is actualizing a dream that began even before recently traveling to Europe.
“Creating a pop-up restaurant concept has been a goal of mine for some time,” shared Chef Fields, “But while planning my summer trip to Europe, I was reminded of how their celebration of all artistic expression is magnified during summer- epicurean, cinematic, wine-making- and what a perfect way to bring that to the gorgeous Mile High city.”
Transforming the plaza at the Denver location, the downtown spot is converted into a dream destination at 5:30 pm with a four-course menu with pairings served from 6:00-9:00 pm followed by a foreign film projected onto the side of the building itself. Guests feel as if they’ve been flown to Europe in this authentic experience right here in the Mile High City.
Beginning June 30th with an Italian-themed meal and movie, Chef Fields recent return from Italy will be celebrated with fantastic fare and the 1960 film La Dolce Vita. On the schedule for July is the French-inspired thriller La Femme Nikita and August’s Spanish menu complete with tapas and molecular gastronomy. Finishing in September with a nod to Americana and variations on outdoor BBQ, the series is not to be missed in the heart of Downtown Denver.
