The LoDo location of Rio Grande Mexican Restaurant has launched a new bar menu featuring a number of small plates. In addition to the bar bite features, new fall and winter cocktails have been created.
Check out the queso deluxe, a traditional queso swirled with beans, guacamole, and pico de gallo. Their old-style guacamole has been kicked up with an addition of mango salsa and salsa verde.
The crispy jalapeno caps are worth the trip alone. Sliced fresh jalapenos are breaded, flash-fried, well seasoned, and served with a poblano ranch dipping sauce.
Added to the menu are two flavors of empanadas - steak or seafood - topped with a five pepper crema or an avocado crema. The last addition to the menu is citrus based shrimp ceviche. The ceviche is topped with diced avocado and served with a side of yummy, spiced, fried tortilla chips.
Six cocktails have been crafted for the bar menu, but feel free to order them anywhere in the restaurant. The Ranch Water, a lighter version of a margarita, starts with El Tesoro tequila, adds a splash of soda water, and a squeeze of fresh lime.
The cucumber mojito is light and fresh and would make for an awesome summer drink. While the clock may have just turned back and the leaves are falling, it's still refreshing to enjoy in the cooler weather.
Rio's take on the classic poloma starts with Herradura Silver, adds soda, and fresh grapefruit juice - an easy drink to enjoy.
The Perfect Storm may be the show stopper. Herradura Reposado is mixed with fresh lime, ginger beer, and cassis. So easy to drink and a Mexican-style version of the traditional Moscow Mule.
Some of the drinks and appetizers will all be featured on Rio's happy hour at $1 off Monday - Friday 3-6pm.
