Ricotta Frittata
2 eggs
4 tbsp. low-fat ricotta cheese
nonstick cooking spray
Any combination of ground black pepper, paprika, garlic powder, onion powder and Tabasco sauce

Spray a microwave-safe bowl with nonfat cooking spray.

Break two eggs into the bowl; beat slightly with fork. Stir in ricotta cheese and continue beating until mixture is thick and lemon colored. Sprinkle on seasonings to taste and stir slightly.

Place bowl in microwave and heat for 2 minutes, 30 seconds using high power. Egg mixture will puff slightly and should separate from sides of bowl. Serves 1.
