Tonight's episode of “Restaurant Stakeout” was titled "Blonde Ambition" Willie Degel came to BlonDee’s Bistro & Bar in Huntington, N.Y. after hearing from owner, Dena Fenza. She was devastated by a scathing review by the New York Times and now needs Willie’s help to save her and her three kids.
After installing the hidden cameras, they set up close to the restaurant and Dena got to see what happens when she is not there. Chef Mike is her driving force in the restaurant; until she heard his comments in the kitchen. Colin is her manager, and he is the boss when she is not there. When Colin brought a dish back to the kitchen, Chef Mike was totally disrespectful to him and his temper flared. Willie told Dena that he was sending in his own critic to check the place out. Dena took the bad review to heart, and Willie told her that she could use it as motivation to change; not to cry and give up.
A man asked to speak to the chef regarding his meal. He had it before and felt that he had a better selection the last time. The chef pointed out that there is a difference between the lunch and dinner menus.
Willie sent in his undercover people to test the knowledge of the wait staff. The first test was a failure. Dena was at a loss for words. Then the chef was loud and abusive to the line cook, and the customers could hear every word. The key issues Willie had to address were; food inconsistency, no guidelines, menu knowledge and a chef with no respect for authority.
At the emergency staff meeting, Dena told the staff that she needed to change the negativity; then Willie walked in and pointed out the problems. He met with Dena to set a plan in motion from answering the phone, greeting guests, knowing the menu to presenting the check. He will enable her to have more time with her kids, who Willie met and fell in love with.
When Willie met with Dena and the staff, he gave Colin the reins to manage the entire restaurant, including the back of the house. He worked with the chefs and had them producing as a team. He also had the waitresses working together.
Six weeks later, Willie returned to find a new manager and bartender doing a great job. The place was running well, and reviews were so much better thanks to Willie and his staff of "Restaurant Stakeout."
