Keeping track of what we eat takes time.  That investment in time can pay off huge dividends. A study by the Pew Research Center shows that while American's are eating more now, they are enjoying it less. We are also eating more food than we need here in the land of the free.  With that in mind it is a startling to find 1 in every 8 Americans is food insecure.  By resolving to eat consciously we can eat less, choose to be more healthy and share a little of the extra we no longer need with our neighbors who are not so fortunate to have the choice.

A new USDA study revels 49 million Americans are on the brink of hunger.  That number is thought to include almost 1 in 4 children.  These numbers are alarming especially when we have the ability to feed all Americans.  In an article titled "Our Food, Our Future" Donella H. Meadows Ph.D. suggests while we have the ability to feed all of our citizens, we need to rethink the way we are going about it.  Just as we eat more food than we need, we also produce our food in a price driven manner that is far less than healthy for our collective whole.

The movie, Food Inc., Michael Pollan's Omnivore's Dilemma and Barbara Kingsolver's , Animal, Vegetable, Miracle  also discuss problems with our food supply.  They offer eyeopening statistics and stories about how less complicated methods are proving to offer delicious and healthy, viable options. 

Doing the right thing for your self and your community is a conscious decision. If you are looking to end the new year positively consider a small donation to one of these two organizations;
