Remington's next cigar dinner is scheduled for Tuesday, March 12th and will feature a specially crafted five course meal paired with cigars and wine and a pair of guest speakers.
Executive sous chef Ken Kochenash and his culinary associates have prepared the following menu for the event:
An appetizer of blue corn crusted shrimp served on a bed of apple, bell pepper and jicama slaw with chunky tomato avocado relish starts the evening, along with a pairing of Zaca Mesa Viognier.
A classic wedge salad follows, loaded with roma tomatoes, red onion and buttermilk blue cheese dressing.
Next up is a raspberry sorbet, which sets up the entree of dijon herb-crusted rack of lamb with mint and spicy peanut sauces, oven roasted red potatoes and steamed baby carrots. A glass of Novy Russisan River Valley Syrah will be paired with this course.
The finale is a dessert of kumquat cheesecake with orange marmalade and melba sauces, paired with Domaine La Tour Vieille Banyuls.
Brad Berko of Scottsdale Cigar Club and Greg Wynne of Valley of the Sun Fine Wines are slated to be the guest speakers during the dinner.
The night begins with a reception at 6:30 pm followed by dinner starting promptly at 7 pm. Tickets for the dinner are $125 inclusive per person - to reserve your spot, call Remington's at 480-951-5101.
