Remington's next cigar dinner is March 12

Remington's next cigar dinner is scheduled for Tuesday, March 12th and will feature a specially crafted five course meal paired with cigars and wine and a pair of guest speakers.

Executive sous chef Ken Kochenash and his culinary associates have prepared the following menu for the event:

An appetizer of blue corn crusted shrimp served on a bed of apple, bell pepper and jicama slaw with chunky tomato avocado relish starts the evening, along with a pairing of Zaca Mesa Viognier.

A classic wedge salad follows, loaded with roma tomatoes, red onion and buttermilk blue cheese dressing.

Next up is a raspberry sorbet, which sets up the entree of dijon herb-crusted rack of lamb with mint and spicy peanut sauces, oven roasted red potatoes and steamed baby carrots. A glass of Novy Russisan River Valley Syrah will be paired with this course.

The finale is a dessert of kumquat cheesecake with orange marmalade and melba sauces, paired with Domaine La Tour Vieille Banyuls.
