You can’t beat the color for Valentine’s Day, and the flavor is great too. Plus these cookies are quick and easy to make for a weeknight.
The cookies start with a boxed cake mix. All you need to do is add a few eggs, some oil, roll them in powdered sugar and you are set! You can’t get a recipe that is much easier. The end result is a moist cookie with a hint of cocoa flavor, just like red velvet cake. To make these cookies even more festive, use a heart shaped cookie cutter after they are out of the oven.

Red Velvet Valentine Cookies (recipe adapted from Two Peas and their Pod)
1 box red velvet cake mix
2 tablespoons flour
2 eggs
¼ cup canola oil
¼ cup apple sauce
Powdered sugar, for rolling the cookies
Heart shaped cookie cutter, optional
Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
In a large bowl, combine the cake mix and flour. Whisk until clumps disappear. In the bowl of a stand mixer, mix together cake mix, flour, eggs, oil, and apple sauce. Mix until smooth. Take about 1 tablespoon of dough and form into a ball. Roll in powdered sugar until coated. Place on prepared baking sheet and bake for 10 minutes, or until edges are set and cookies begin to crack.
Let cookies sit on baking sheet for 2 minutes. If desired, cut into heart shapes using a cookie cutter. Transfer cookies to a wire cooling rack and cool completely.
