Red velvet pancakes

2 cups flour
3 tbsp. cocoa powder
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 cups milk
2 tbsp. white vinegar
½ cup sugar
2 eggs
Red food coloring
2 tsp. vanilla
1/3 cup butter, melted

In a bowl, stir together the dry ingredients. In another bowl, combine the milk and vinegar- let this sit for 2 minutes. In a mixer, combine the vinegar mixture and the rest of the wet ingredients. Beat on low until well combined. Slowly add in the dry mixture. Once everything is well combined, heat a greased skillet over medium heat. Pour your batter into the skillet to make the cakes and if desired, keep in a preheated oven to maintain warmth. These are served great with a cream cheese glaze (recipe as follows).

Glaze Ingredients
2/3 cup cream cheese, room temp
6 tbs. butter, room temp
2 cups powdered sugar
½ cup milk
½ tsp. vanilla

Whisk ingredients together until well combined. Serve drizzled over your pancakes.
