It's National Cupcake Day, and Christmas is just 10 days away! To help you celebrate, we have a very special cupcake recipe for you that is also the perfect Christmas treat! There is something about Red Velvet Cupcakes that just says "Christmas" don't you think? From their cheerful red color to their snow-white cream cheese frosting, these delightful little cakes just seem to belong to the holiday season! The best part about these rich and wonderful cupcakes is that not only do they taste divine, but they are a cinch to make too!

Red Velvet Cupcakes with Cream Cheese Frosting

2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
Red food color
2 tsp. Vanilla extract
Vanilla Cream Cheese Frosting (recipe follows)

1. Preheat oven to 350°F. Line muffin tins with paper muffin cups.
2. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
3. Beat butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, one at a time. Add sour cream, milk, food color and vanilla.
4. Gradually beat in flour mixture on low speed until just blended. Do not overbeat.
5. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
6. Bake 20 to 25 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. Frost with Cream Cheese Frosting. 

Cream Cheese Frosting:
1 package (8 oz.) cream cheese, softened
1/4 cup (1/2 stick) butter, softened
2 tablespoons sour cream
2 tsp. Vanilla extract
1 (16 oz.) box confectioner's sugar

In a large bowl, beat first 4 ingredients together until fluffy. Gradually add confectioner's sugar, beating after each addition until frosting is smooth.
