Red velvet – smooth, chocolaty and covered with scrumptious creamy icing. Whether a piece of voluptuous cake or the convenient hand-held form of a cupcake, this is one dessert that screams Happy Valentines Day like no other. Make them for a loved one, make them for your co-workers, make them to let someone know you’re thinking of them.

Although red velvet cake is now associated with the Southern United States, its origins are sketchy and varied. Some sources state that it has been around since the 1800s, some associate it with the Waldorf-Astoria Hotel in New York, others say that James Beard made it famous in a cookbook, and some say that its new-found fame is due to the movie “Steel Magnolias”. Like many other recipes, it morphs as time goes on to be the recipe we know today.

Although many types of frostings go well with Red Velvet Cake, nothing beats Cream Cheese Frosting (recipe below).

Red Velvet Cake

Ingredients for Red Velvet Cake:

  • ½ cup butter, softened
  • 1 ½ cups sugar
  • 2 eggs
  • 1 ounce liquid red food coloring
  • 1 tsp. vanilla
  • 2 ¼ cups flour
  • ¼ cup unsweetned cocoa powder
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 cup buttermilk
  • 1 tsp. baking soda
  • 1 tablespoon white vinegar

Directions for making Red Velvet Cake:

Preheat oven to 350 degrees.

In large bowl, beat together the butter and sugar. Beat in the eggs, then the red food coloring and vanilla.

Mix together the flour, cocoa powder, baking powder, and salt. Beat the dry ingredients in to the batter alternately with the buttermilk. Beat just enough to incorporate the ingredients.

Dissolve the baking soda in the vinegar and stir it into the batter.

Pour the batter into 2 greased 9-inch cake pans or cupcake tins lined with papers.

Bake 9-inch layer pans for 30 – 35 minutes. Bake cupcakes for 18 – 22 minutes. (Test for doneness by inserting a toothpick which should come out nearly clean – don’t wait for it to come out clean, or the cake will be overdone.) Frost with Cream Cheese Frosting.

Cream Cheese Frosting Recipe

Ingredients for Cream Cheese Frosting:

  • 8-ounce package cream cheese, softened
  • 4 tablespoons butter, softened
  • 3 ½ - 4 cups powdered sugar
  • 1 tsp. vanilla

Directions for making Cream Cheese Frosting:

Whip together ingredients until smooth and well-blended.
