In the last article there was a lesson in making tres leches cakes using leftover cake tops from yellow or white cake. Here is a way to use those leftover red velvet cake tops. Enjoy!!
Red velvet cake parfaits
Makes 1 parfait
2 cups heavy whipping cream, whipped, or more if desired
½ cup cream cheese frosting
1 1/2 cups red velvet cake crumbs
Red velvet cake crumbs, for garnish
Using a piping bag, pipe a thick layer of whipped cream into the bottom of a plastic parfait cup.
Using another piping bag, pipe a thin layer of cream cheese frosting on top of whipped cream. Be sure to cover whipped cream layer but try not to mix together.
Top cream cheese frosting with 1 ½ cups red velvet cake crumbs.
Using the same piping bag as before; pipe another thick layer of whipped cream on top of cake crumbs in a dome shape.
Sprinkle red velvet cake crumbs on top of whipped cream dome for garnish.
Serve immediately or chill at least 2 hours before
