Red Cabbage Soup

You may chjange the recipe a bit by substituting peas in place of the beans. Rice may also be substituted in place of the potato. 4 cups of water

4 vegetable bouillon cubes

1/2 cup of carrot shredded

1/2 cup of celery, sliced

1 potato, peeled and diced

1 onion, chopped

1 can of green beans, drained

1 can of tomatoes, diced

1 bay leaf

1/2 teaspoon of basil leaves

3 cups of red cabbage, shredded

1 teaspoon of salt

1 teaspoon of black pepper


1. In a large saucepan, combine the water bouillon cubes, carrot, celery, potato, onion, beans, tomatoes, bay leaf and basil. Cook and bring to a boil. Cover and simmer for 30 minutes.

2. Add the cabbage and simmer for 10 minutes. Add the salt and pepper and stir well. Serve hot and enjoy!
